I tried something tonight that may be my answer: frozen packages of chicken breasts. (See picture to the left.) These are from Target, of all places. They are "all natural" and they are very easy to cook: Just stick in the oven at 375 for about 40 minutes. I coated them in my usual mixture of dijon mustard, parmesan cheese and English muffin crumbs, and they tasted really good! I asked Charles if he could tell the difference, and my sweet husband said they were delicious!
This solves a big problem for me.
My kids are crazy about teriyaki salmon. I just marinate 2-3 steaks on Sunday and I can throw these into the oven at 400 degrees for 15-20 minutes and throw some rice and brocolli in the microwave and voila! A great healthy meal in under 30 minutes! I just use the Kroger marinade to save time.
Also, I buy a bunch of those frozen turkey breasts and put one a week in the refrigerator. I top lightly with butter, salt and pepper and then cook in the crockpot with broth. These end up being so tender! That's all I got that my family will all eat! Good luck!
